Creamed Spinach with Cheese

2 pkgs frozen chopped spinach
1 1/2 tbsp butter (unenriched) or vegetable oil
1 small onion chopped (or about 1/2 cup)
1 1/2 tbsp unenriched flour
1/4 cup water
1/4 cup half and half (unenriched)
2 tbsp grated Parmesan cheese
1/4 cup Monterey Jack cheese (or more to taste)
1/4 tsp salt (to taste)

In a large skillet saute the onions in the butter or oil until soft. Thaw the spinach but do not drain it. Add the spinach to the skillet, stir to combine, and heat through. In a small bowl whisk the flour, water, and cream. Add this mixture to the spinach and stir, heating gently, until thickened. Add the Parmesan, Monterey Jack and salt and stir until the cheese melts.
