I eat this virtually every day for breakfast. It's tasty, has a lot of protein, and is fast to make. This egg dish with 2 of the Trader Joe's chicken breakfast sausages is just right.

You'll need the following equipment:
A 2 cup size microwave safe plastic container with a screw top (Ziplock Twist n' Loc)
A microwave oven

Ingredients:
1/2 cup egg whites (NOT EGGBEATERS!! THEY HAVE VIT D - Plain egg whites only)
pinch salt
large pinch of dried chives
large pinch of onion powder
Grated cheese (MP safe cheese, naturally. I use a combination of Cheddar and Monteray Jack)
Olive oil or canola oil

Wipe the container and the lid with oil. If you don't, the egg will stick like mad!

Add the eggs and other ingredients, put the lid on tight and shake for about 10 seconds to mix and foam it up a bit.

NOW LOOSEN THE LID - THIS IS VERY IMPORTANT! Just leave it sort of sitting on top, but not engaged.

Put the container in the microwave and cook on high for about 1 minute and 20 seconds. (I have a 1200 watt microwave, you may need to adjust if yours is different, or if you make this in a different kind of container like glass or porcelain - the eggs should just be done all the way through, not real rubbery) The egg will balloon way up while it cooks, but will settle down once the heat is off.

Remove container from oven. Leave covered.

(Optional)Put your precooked chicken sausages on a plate and zap them for about 30 seconds to warm them. (link is to the suggested foods page)

Dump the eggs onto the plate and sprinkle a big pinch of the shredded cheese on top of the eggs. (a loosely heaping tablespoon or thereabouts - enough to cover the top of the eggs)

For a change of place on your birthday or a holiday, omit the chives and onion powder, reduce the salt a little. Add the cheese, let it melt in place and then add a teaspoon of strawberry jam on top. Wunderbar! (Trader Joe's has a really good strawberry jam, if you can get it)
