Burritos
Spice Mix:
1 tsp. kosher salt
2 Tbsp. chili powder
1 Tbsp. onion powder
1 tsp.garlic powder (some may be sensitive to garlic)
1 tsp. oregano
1/4 tsp. cayenne pepper (or more to taste)
1 tsp. cocoa powder
1 1/2 tsp. ground fenugreek (optional)
1/4 tsp. smoked salt (optional)
Mix all ingredients and store in air tight container.
Filling:
1 1/2 lb. Ground beef ( I use 90% lean organic ground beef when possible)
1/2 large onion, chopped
2 - 3 stalks celery, chopped
2 tsp. beef bullion or 2 bullion cubes
2 tbsp. unenriched flour
1/4 tsp. sugar
1 or 2 tbsp spice mix (to taste)
3/4 cup cold water
Brown the ground beef, onions, and celery together. (I use very lean beef so I don't bother draining the mixture after it browns. If you do drain the mixture then increase the water to one cup.) Add the bullion powder or cubes to the meat mixture and stir. In a small mixing bowl, whisk the flour, sugar, spice mix and water. Add this mixture to the meat and stir to combine. Let simmer for 10 minutes or until the mixture thickens.
Serve on homemade low carb crepes. Add your favorite toppings such as salsa, MP safe sour cream, MP safe cheese, or chopped tomatoes.
